RECIPE: Cast Iron Steak with Chimichurri Sauce

Serves 1 steak per person | Total time 45 mins
Ingredients
Crispy Baked Potatoes:
- 1 – 2 Potatoes per person
- 2 Twigs Rosemary
- 1 tbsp Butter
- A pinch of Salt and Pepper
- ½ cup Olive Oil
- 250 ml Sour Cream
- Chives sliced
Chimichurri Sauce:
- 1 Cup cilantro
- 1 cup parsley
- 1-2 garlic cloves
- 1/4 cup oregano
- 1/2 cup olive oil
- 2 tablespoons white wine vinegar
- 1 teaspoon lemon juice
- Teaspoon of pepper and salt
Mushrooms:
- 1 Pack of your favorite mushroom variety
- 1 tbsp of butter
- 1 tsp of vegetable or olive oil
- 1 Twig Rosemary
- Salt & Pepper
Steak:
- 1' Ribeye per person (preferably bone in) – Vessel Meats in Dartmouth is my choice for HRM
- Salt and Pepper
- 1 tbsp Butter
- 3 Garlic Cloves
- 2 twigs Rosemary
- 1 tbsp Olive or Vegetable Oil
Instructions
Crispy Baked Potatoes:
- Bring pot of water to a boil. Add potatoes and cook for 12 - 15 minutes, or until tender with a fork. Remove from water and place on an oiled baking try. Partially smash potatoes so skin is broken. Sprinkle with salt and pepper, rosemary (or other herbs), butter, and olive oil.
- Put into preheated oven at 425 for 10 minutes then turn to broil at 500 for 5 - 10 mins - watch potatoes so they don't burn, but you want them to form crispy tops. Remove once cooked to your desired doneness. Serve and dollop with sour cream and sliced chives.
Chimichurri Sauce:
- Combine 1 cup Cilantro, 1 cup Parsley, 1-2 Garlic cloves, 1/4 cup oregano, 1/2 cup olive oil, 2 tablespoons white wine vinegar, 1 teaspoon lemon juice, and a pinch of salt and pepper.
- Blend until they form a smooth sauce. Set aside until steaks are done.
Mushrooms:
- Heat pan to medium heat
- Add 1 tbsp of Butter and 1 tsp of Vegetable Oil and heat.
- Add 1 Pack of your favorite mushrooms, 1 Twig Rosemary, and a pinch of Salt & Pepper
- Cook, stirring occasionally until crispy - approx 10 mins.
Steak:
- Remove steak from fridge 1-2 hours before cooking and salt aggressively on all sides.
- Preheat oven to 425. Pat steak dry, rub with sliced garlic cloves, and season generously with salt and pepper.
- Heat an oven safe pan to medium high - add 1 tbsp Butter and 1 tbsp Olive Oil.
- Add smashed Garlic Cloves, rosemary, and Steak/Steaks
- Sear on both sides for 1 minute, or until crust is formed, then put into oven for 6-12 minutes depending on doneness preference.
- Remove from oven and rest for 7 minutes
- Slice steak, dress with sauce, and enjoy!

Wine – Full Body California Cabernet Sauvignon or Australian Shiraz
