Two Islands Sailor’s Delight Irish Red Meatballs

Serving 4 | Prep time 10 mins | Total time 50 mins

Ingredients:

  • 375 gm sausage meat
  • 500 gm regular ground beef
  • 2 minced garlic cloves
  • 1 egg
  • 1 tbsp Italian seasoning
  • 1 tbsp paprika
  • 1 cup grated parmesan cheese
  • 1 tbsp chopped flat leaf parsley
  • 1 tsp chopped rosemary
  • 1 tsp olive oil
  • 1 cup dried breadcrumbs
  • 1 cup Two Islands Sailor’s Delight Irish Red
  • Salt and pepper to taste
  • 680 ml tomato sauce
  • Serve over noodles of your choice or cooked polenta

Pairing Suggestion – Two Islands Brewing Eagle Island Bock

Instructions:

  • In a large bowl, combine 375 gm sausage meat, 500 gm regular ground beef, 2 minced garlic cloves, 1 egg, 1 tbsp Italian seasoning, 1 tbsp paprika, 1 cup grated parmesan cheese, 1 tbsp chopped flat leaf parsley, 1 tsp chopped rosemary, and 1 tsp olive oil. Mix until combined
  • Gradually add 1 cup of dried breadcrumbs, 1 cup of Two Islands Sailors Delight Irish Red, and mix
  • Heat 1 tbsp in a large non stick frying pan to medium high
  • Form meatballs slightly smaller than a tennis ball and put into pan. Cook for 1-2 minutes per side until meatballs are browned all over
  • Pour 680 ml tomato sauce into pan and simmer for 10 – 15 minutes or until meatballs are cooked through
  • Serve over pasta with parmesan cheese and enjoy!
