Uncle Leo’s Smoked Porter Slow Cooker Braised Short Ribs

Serving 4 | Prep time 30 minutes | Total time 24 hours

Ingredients:

  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp olive oil
  • 1 minced garlic clove
  • 1 tsp dijon mustard
  • 3 sprigs rosemary
  • 1 tbsp paprika
  • 1 tbsp tomato paste
  • 2 cups Uncle Leo's Smoked Porter
  • 1 sweet onion sliced into pucks
  • 8 beef short ribs
  • Salt and pepper to taste


Pairing Suggestion – Uncle Leo's Irish Red Ale

Instructions:

  • Turn slow cooker on high
  • Mix 2 cups beef broth, 1 tbsp worcestershire sauce, 1 tbsp olive oil, 1 minced garlic clove,1 tsp dijon mustard, 3 sprigs rosemary, 1 tbsp paprika, 1 tbsp tomato paste, 2 cups Uncle Leo’s Smoked Porter into slow cooker
  • In a cast iron skillet sear beef short ribs on both sides
  • Place onion pucks in bottom of slow cooker
  • Put beef ribs into slow cooker on onion pucks
  • Season with salt and pepper
  • Cook on high for 6 - 8 hours or until beef is tender and falls off bone
  • Serve with chives and mashed potatoes
  • Enjoy!
