Nine Locks Stargazer Brined Salmon with Mango Slaw

Ingredients:
Brine
- 473 ml Nine Locks Stargazer IPA
- 4 cups water
- 2 garlic cloves
- 1 bay leaf
- 2 tbsp salt
- 1 tbsp maple syrup
- 1 side salmon
- 1 tbsp vegetable oil
- Salt and pepper
Mango Slaw
- 1 diced mango
- 1 diced jalapeno pepper
- 1 diced avocado
- 1 cup chopped cilantro
- 1 diced shallot
- ½ diced orange or red bell pepper
- ½ cup halved cherry tomatoes
- 1 cup crumbled feta cheese
- 1 tsp white wine vinegar
- 1 tsp olive oil
- Salt and Pepper to taste
Pairing Suggestion – Nine Locks Blackberry Blonde
Instructions:
- In a bowl, place 473 ml Nine Locks Stargazer, 4 cups water, 2 garlic cloves, 1 bay leaf, 2 tbsp salt, and 1 tbsp maple syrup. Stir until dissolved. Submerge salmon in liquid and let brine for 25 minutes
- Preheat oven to 400 degrees
- To make mango salsa, combine 1 diced mango, 1 diced jalapeno, 1 diced avocado, 1 cup chopped cilantro, 1 diced shallot, ½ diced orange bell pepper, ½ cup halved cherry tomatoes, 1 cup crumbled feta cheese, 1 tsp white wine vinegar, and 1 tsp olive oil. Salt and pepper to taste. Set aside
- Remove salmon from brine and dry with paper towel. Place on greased cookie tray.
- Bake for 15 - 20 minutes or until cooked through
- Remove salmon from oven and top with mango salsa. Season with salt and pepper
- Enjoy!
