Nine Locks Stargazer Brined Salmon with Mango Slaw

Serving 4 | Prep time 20 mins | Total time 50 mins

Ingredients:

Brine

  • 473 ml Nine Locks Stargazer IPA
  • 4 cups water
  • 2 garlic cloves
  • 1 bay leaf
  • 2 tbsp salt
  • 1 tbsp maple syrup
  • 1 side salmon
  • 1 tbsp vegetable oil
  • Salt and pepper


Mango Slaw

  • 1 diced mango
  • 1 diced jalapeno pepper
  • 1 diced avocado
  • 1 cup chopped cilantro
  • 1 diced shallot
  • ½ diced orange or red bell pepper
  • ½ cup halved cherry tomatoes
  • 1 cup crumbled feta cheese
  • 1 tsp white wine vinegar
  • 1 tsp olive oil
  • Salt and Pepper to taste


Pairing Suggestion – Nine Locks Blackberry Blonde

Instructions:

  • In a bowl, place 473 ml Nine Locks Stargazer, 4 cups water, 2 garlic cloves, 1 bay leaf, 2 tbsp salt, and 1 tbsp maple syrup. Stir until dissolved. Submerge salmon in liquid and let brine for 25 minutes
  • Preheat oven to 400 degrees
  • To make mango salsa, combine 1 diced mango, 1 diced jalapeno, 1 diced avocado, 1 cup chopped cilantro, 1 diced shallot, ½ diced orange bell pepper, ½ cup halved cherry tomatoes, 1 cup crumbled feta cheese, 1 tsp white wine vinegar, and 1 tsp olive oil. Salt and pepper to taste. Set aside
  • Remove salmon from brine and dry with paper towel. Place on greased cookie tray.
  • Bake for 15 - 20 minutes or until cooked through
  • Remove salmon from oven and top with mango salsa. Season with salt and pepper
  • Enjoy!
