Schoolhouse Chequers Porter, Bacon, Jalapeno Burgers

Serves 4 | Prep time 10 mins | Total time 30 mins

Ingredients:

  • 1 sliced jalapeno
  • 1 cup apple cider vinegar
  • 1 tbsp butter
  • 1 tsp olive oil
  • 1 diced shallot
  • 4 strips crispy bacon
  • 1 cup Schoolhouse Chequers Porter
  • 454 gm regular ground beef
  • 1 tsp Worcestershire sauce
  • 1 tsp smoked paprika
  • ½ cup breadcrumbs
  • Salt and Pepper
  • 150 gm sliced aged cheddar
  • 4 hamburger buns

Pairing Suggestion – Schoolhouse Brewery Principal Ale

Instructions:

  • Slice 1 jalapeno and put in bowl with 1 cup apple cider vinegar. Set aside until ready for use
  • Heat frying pan to medium heat and add 1 tsp butter, 1 tsp olive oil, 4 crumbled crispy bacon strips, 1 diced shallot. Cook for 2 minutes or until shallot softens
  • Reduce heat to low and add 1 cup Schoolhouse Chequers Porter. Simmer for 4-5 minutes and until liquid reduces by half. Add to large bowl
  • Add 454 gm regular ground beef, 1 tsp Worcestershire sauce, 1 tsp smoked paprika, ½ cup breadcrumbs, salt and pepper to taste. If mixture is too wet add an additional ½ cup bread crumbs
  • Mix and form 4 equal hamburger patties
  • Heat a cast iron pan to medium heat and add 4 patties
  • Cook 3 – 4 minutes per side or until burgers are cooked to 160 degrees internal temperature
  • In the same pan add remaining butter and melt. Add hamburger buns to toast
  • Assemble burger with your favourite condiments and enjoy!
