Hill Top Hops Red Ale Scotch Bonnet Hot Sauce

Yield 3.5 Cups of Sauce | Prep time 20 mins | Total time 40 mins

Ingredients:

  • 35 Scotch bonnet peppers
  • 2 poblano peppers
  • 2 cups Hill Top Hops Red Tale Red Ale
  • 2 garlic cloves
  • ½ sweet onion
  • 2.5 cups apple cider vinegar
  • 1 tsp olive oil
  • 2 cups water
  • 2 tbsp maple syrup
  • 1 lime
  • Salt and pepper to taste

Pairing Suggestion – Hill Top Hops Let The Good Times Radle Radler

Instructions:

  • Chop 2 garlic cloves, ½ sweet onion, and all peppers, being careful not to wipe eyes. Place ingredients into a bowl with 1 cup Hill Top Hops Red Ale, 1 cup apple cider vinegar, and 1 tsp salt.
  • Let marinate for 30 minutes, then strain
  • Heat pot to medium heat and add 1 tsp olive oil. Add peppers, garlic, and onion. Cook for 5 minutes
  • Reduce heat to medium low and add ½ cup Hill Top Hops Red Ale and 2 cups water. Simmer for 20 minutes or until all ingredients are tender
  • Pour mixture into blender and add 1.5 cups apple cider vinegar, 2 tbsp maple syrup, and the juice from 1 lime
  • Blend all ingredients until smooth. Season with salt and pepper to taste
  • Let cool to room temperature and refrigerate until use
  • Enjoy!
